MACARONI and cheese is known for being the go-to dish whenever one is looking for simplicity yet a homely taste and feeling. One can throw in mince or pilchards to give the dish a bit of meatiness. The version I’m sharing has a nostalgic twist to it – with the addition of corned beef.
Before many households had electricity, cans of pilchards, corned beef and baked beans served as an important source of protein. In my mother’s house we bought these items in trays (cases) to last us the whole month.
This dish is perfect for a weekday dinner, it’s simple and requires minimum effort.
